- 1 Cup Coriander
- 1 Cup Onion
- 1 Green Pepper
- 1 Jalapeño (Adjust to preference)
- 1 Tablespoon Minced Garlic
- 1 Tablespoon Minced Ginger
- 3 Tablespoons Vegetable Oil
- 1 Tablespoon Bahaurji Kabsa Rice Chicken Spice Blend Add to cart
- 1 Tablespoon Black Pepper Powder
- 1 Tablespoon Turmeric Powder
- 2 Tablespoons Salt
- 2 Crushed Dried Lemons (Lumi)
- 1 Whole Chicken
- 2 Cups Basmati Rice
- 3 Cups Water
Optional Additions:
- Add extra Jalapeño for more heat
- Garnish with fresh coriander leaves
Step-by-Step Instructions
Prepare Vegetables and Spices:
Chop coriander, onion, green pepper, and jalapeño. Add minced garlic, minced ginger, and all spices. Pour in vegetable oil and crush the ingredients to release their aroma.
Cook the Chicken:
Add the aromatic mixture to the whole chicken in a pan. Stir on high heat to coat the chicken with the spices. Pour 3 cups of water, cover, and cook until the chicken is tender. Once cooked, set the chicken aside.
Prepare the Rice:
Rinse the basmati rice and add it to the chicken stock. Adjust the salt to taste, and cook until the rice is fully cooked and flavorful.
Combine and Serve:
Place the cooked chicken on the rice, cover, and simmer for a few minutes to let the flavours meld together.
